Lunch, anyone?

Ok - so I'm what you could call a "Foodie". I have traveled to all manner of places just for the food. Before the pandemic, used to drive to Boston, NYC, Newport, Maine, Toronto, Ottawa, just to visit specific restaurants over the weekend. I'm also a huge BBQ enthusiast (as some of you already know).

So I figured maybe I'm not alone, and it could be fun to have everyone share their culinary creations. I'll start the dance with today's lunch: my muffalata sandwich loaf. Bon appétit!

I make a mean lasagna.... but,

Citrus, shake and bake chicken!
Take some chicken, breast or thigh, doesn't matter, put them in zip lock bag with some orange juice, or 5 alive or any citrus concentrate. Only need a few spoonfuls. Refrigerate over night- chicken can be defrosting at the same time!
Next day, just shake and bake the chicken as per directions! :)

Oh what I would give for a real stove and oven lol Life with an induction hot plate and a small toaster oven. Tried to have a small BBQ last summer and 4 restaurants complained about the smoke :( I had to get the new hot plate due to the new insurance policy in the building and have spent a month trying to find a magnetic fry pan for my bacon and eggs :( Beginning to think I will have to buy a bit of flat sheet steel and make one, not a hard job but requires some forms to shape the metal on and creates lots and lots of noise lol

I am too busy eating it to be taking photos of it. Yesterday was steak day, Saturday was marinated chicken Caesar Salad and Friday was hand made burgers and spicy oven fries.
Today will be home made Mac 'n Cheese with Italian style sausage.

Simple ronnie, we bought an induction stove last year, all our cast iron pans work great, especially for eggs, we use a flat cast round pan, instant heat and control, use same on small induction stovetops
 
Looks amazing! I would love to have the space to do whole hog. Unfortunately, with current by-laws where I live, you can't even have a wood-fired pizza oven in your yard :( Been wanting to setup a real pit for ages now, but they won't let me. Funny though, how a local restaurant is allowed to have one indoors... ? Doing a steer must have been a challenge. ?

What a great post Corinne. That sandwich is a meal for 4 people! One of the dad's on my son's baseball team loves to BBQ. Travels around NA for BBQ competitions. Luvs it. ❤️
